The perfect Easter treat for the family – A chocolate mini egg cake

With the Easter half-term nearly here, thinking of fun activities to keep the kids entertained can sometimes be a challenge.

Baking is a classic way to spend quality time together and this seasonal and rich dessert is a family favourite.

Here’s how to bake your own chocolate mini egg cake at home.

Chocolate mini egg cake

Ingredients

For the cake

  • 175g unsalted butter
  • 165g self-raising flour
  • 30g cocoa powder
  • 1 tsp baking powder
  • ½ tsp fine sea salt
  • 175g caster sugar
  • 3 free-range eggs
  • 3 tbsp whole milk

For the icing and topping

  • 250g unsalted butter
  • 500g icing sugar
  • ½ tsp vanilla extract
  • 80g bag Cadbury Mini Eggs

Method

  1. Preheat the oven

Preheat your oven to 180°C / Gas Mark 4.

  1. Prepare the tins

Lightly grease the base and sides of two 18cm cake tins, then line them with baking parchment.

  1. Mix the dry ingredients

Combine the flour, cocoa powder, baking powder and salt in a bowl and then set aside.

  1. Whisk the butter and sugar

In a large mixing bowl, beat the butter and sugar using an electric mixer for two to three minutes, until the mixture becomes pale and fluffy.

  1. Add the eggs

Beat in the eggs one at a time. Gradually fold in the dry ingredients until just combined, then gently mix in the milk.

  1. Bake the cakes

Divide the mixture evenly between the prepared tins and level the tops. Bake for 20 to 25 minutes or until the cakes are risen and a skewer inserted into the centre comes out clean.

  1. Cool the cakes

Allow the cakes to cool briefly in their tins before transferring them to a wire rack to cool completely.

  1. Make the buttercream icing

Cut the butter for the icing into cubes and beat in a bowl until soft. Sift in the icing sugar and mix until smooth. Add the vanilla extract and beat until the icing is light and creamy.

  1. Ice the cake

Put the buttercream into a piping bag and cut a small hole in the end. Pipe small peaks across the top of one cake layer. Place the second cake on top and repeat the piping across the surface.

  1. Decorate the cake

Finish by arranging the mini chocolate eggs across the top of the cake. Then slice and enjoy with your family and friends!
